Hello Thrive Moms! My name is Andrea and I'm the Administrative Coordinator for Thrive Moms. I love that we're doing this series about healthy living, taking time for rest, and making ourselves a priority! As mamas I think a lot of put our health and fitness on the back burner and forget that we need to take care of ourselves.

I'm excited to be sharing with you one of my favorite meals, I make this probably about once a week for my family and it's always a crowd pleaser. It's a Paleo version of taco salad, what makes it "Paleo" is the absence of cheese and the traditional chips you might add to the taco salad.
If you'd prefer those please add them, but I do not like the extra calories they add. And I don't even miss them at all. For the last few months my family and I have been trying out the Paleo lifestyle. We still have to cut out a few things before going full fledged but so far I've been loving all the new recipes we're trying.
I've been using the Practical Paleo cookbook.
Paleo Taco Salad (feeds 4)
1 pound ground turkey, browned & seasoned with Taco Seasoning
3 green onions chopped
1 avocado cut & cubed
1 handful of cilantro chopped
1 red pepper chopped
1 green pepper chopped
Half a head of lettuce chopped
2 tomatoes chopped
optional limes & salsa
Brown your meat and add the 2 tablespoons of taco seasoning. I make my own taco seasoning. You can find that here.
After my meat is browned and ready, I put all the rest of my ingredients in smaller individual bowls so that people can assemble their taco salads with whatever they like.
Pretty simple dinner and so good!
